  • 1 1/2 pounds butternut squash (peeled, seeded, and cubed)
  • 2 gala apples (peeled, cored, and diced)
  • 1 tablespoon cinnamon
  • 2 tablespoons brown sugar (or honey)
  • 1/2 teaspoon salt
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cubed butternut squash, diced apples, cinnamon, brown sugar, and salt. Mix until well coated.
  3. Pour the mixture into a baking dish with a lid and spread evenly.
  4. Add small sections of chopped butter on top.
  5. Cover the dish and bake for 15 minutes.
  6. Remove from the oven, stir in the raisins and pecans, then cover again and bake for an additional 15 minutes until the squash is tender and lightly browned.
