  • 2 tablespoons extra virgin olive oil
  • 1 packet dry ranch seasoning mix
  • 2 teaspoons ground black pepper
  • 2 pounds boneless, skinless chicken breasts, cut into pieces
  • 1 cup mild cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 810 slices turkey bacon, cooked and crumbled
  • Sour cream and chopped green onions for serving

Instructions

  1. Preheat your oven to 425°F. Line a large sheet pan with parchment paper.
  2. In a bowl, combine diced potatoes with olive oil, ranch seasoning mix, black pepper, and buffalo sauce. Toss until well coated.
  3. Spread the potatoes evenly on the prepared sheet pan and roast for about 40 minutes until golden brown and crispy.
