  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon fine sea salt
  • 23 tablespoons Turbinado sugar (optional)

Instructions

  1. Prepare the crust by combining cold butter, flour, and salt until crumbly. Add water and vinegar; mix until just combined. Form into a ball, wrap in plastic wrap, and refrigerate for at least an hour.
  2. In a saucepan over medium heat, melt the butter until golden brown and aromatic; let cool slightly before using.
  3. Mix peaches and strawberries with granulated sugar, cornstarch, lemon juice, and salt; let sit for about 15 minutes.
  4. Preheat oven to 375°F (190°C). Roll out half of the chilled dough for the bottom crust in your pie dish. Fill with fruit mixture.
