  • 12 oz farfalle pasta
  • 10 slices turkey bacon
  • 1 pint cherry tomatoes
  • 2 cups baby spinach
  • 2/3 cup ranch dressing
  • 1 heaping tbsp mayonnaise (or Greek yogurt)
  • 2 tsp dijon mustard
  • 2 tsp Italian dressing

Instructions

  1. Cook the farfalle pasta according to package instructions until al dente. Drain and cool.
  2. In a mixing bowl, combine quartered cherry tomatoes and broken turkey bacon pieces.
  3. In a small bowl, whisk together ranch dressing, mayonnaise (or substitute), dijon mustard, and Italian dressing until smooth.
  4. Add cooled pasta to the bowl with tomatoes and turkey bacon. Stir gently to combine.
  5. Pour half of the dressing over the mixture and stir again. Chill in the refrigerator for at least 1 hour.
  6. Before serving, gently fold in baby spinach and drizzle with remaining dressing. Season with salt and pepper to taste.
