  • 1 lb chicken or turkey kielbasa, sliced
  • 1 lb cheese tortellini (fresh or frozen)
  • 2 cups bell peppers, diced
  • 1 cup red onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your Blackstone grill to medium-high heat for about 5 minutes.
  2. Boil salted water in a pot, add tortellini, and cook according to package instructions (3-5 minutes). Drain and set aside.
  3. In a mixing bowl, toss bell peppers, red onion, garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper until well coated.
  4. Grill kielbasa on the preheated grill for about 3-4 minutes until browned.
  5. Push kielbasa to one side of the grill; add seasoned vegetables to the other side and grill for an additional 5-7 minutes until tender.
  6. Return drained tortellini to the grill; gently toss all ingredients together for another 2-3 minutes until heated through.
  7. Adjust seasoning as needed before serving garnished with fresh parsley.
