  • 1 lb Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning (divided)
  • Salt and pepper to taste

Instructions

  1. Pound chicken to an even thickness of about 1/4 inch. Rub with olive oil and season both sides generously with blackened seasoning.
  2. Heat a skillet over medium-high heat, add 2 tablespoons of olive oil, and cook the chicken for 3-4 minutes until dark amber on one side.
  3. Flip the chicken once, reduce heat to low, then add butter and garlic to the skillet. Cook for an additional 5-6 minutes until the internal temperature reaches 165°F.
  4. Remove chicken, cover with foil to rest, then prepare the sauce in the same skillet by adding remaining butter and sautéing garlic until fragrant.
  5. Stir in heavy cream, remaining blackened seasoning, and let it simmer for about 5 minutes.
  6. Cook pasta until al dente, reserving some pasta water before draining.
  7. Mix parmesan into the sauce until melted, then combine with cooked noodles and add reserved pasta water as needed for consistency.
