  • 2 cups shredded zucchini (about 2 medium zucchini)
  • 1/2 cup melted butter
  • 1/4 cup neutral oil (like canola or light olive oil)
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • Optional: chocolate chips and/or nuts

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, granulated sugar, baking soda, baking powder, salt, cinnamon.
  3. In a large bowl, mix melted butter, oil, brown sugar, eggs, and vanilla until combined.
  4. Grate zucchini and squeeze out excess moisture; then stir into the wet mixture.
  5. Combine wet and dry ingredients gently until just mixed; fold in chocolate chips or nuts if desired.
  6. Pour batter into the prepared pan and sprinkle with raw sugar on top.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
