  • 1/2 cup vegetable oil
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for cream cheese swirl)
  • 1 large egg yolk (for cream cheese swirl)
  • 2 teaspoons vanilla extract (for cream cheese swirl)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin pan with paper baking cups.
  2. In a bowl, whisk together the flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until well combined. Gradually add the dry ingredients until just mixed.
  4. Fill muffin cups about three-quarters full with the batter.
  5. In a separate bowl, beat the cream cheese until smooth. Add sugar, egg yolk, and vanilla extract; mix until combined.
  6. Spoon about a tablespoon of cream cheese mixture onto each muffin and use a toothpick to swirl it into the batter gently.
  7. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean with moist crumbs.
