  • 1 can black beans (15 oz, drained)
  • 1 red onion (chopped)
  • 1 red bell pepper (seeded and chopped)
  • 1 jalapeño (seeded and minced, optional)
  • 1 can tomatoes (15 oz, fire roasted with juice)
  • 1 tablespoon garlic (minced)
  • 2 cups beef stock
  • 1 can tomato paste (6 oz)
  • 1 tablespoon oregano (dried)
  • 2 teaspoons cumin
  • 1 tablespoon cocoa powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper (ground)
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon ground coriander
  • 1 tablespoon chili powder
  • Sour cream
  • Cilantro
  • Cheese (shredded)

Instructions

  1. In a large pot, cook the ground beef until browned while breaking it apart.
  2. Remove the cooked beef to a paper towel-lined plate. Add the chopped onions and red bell pepper to the same pot. Cook until tender.
  3. Add all remaining ingredients into the pot. Stir well to combine everything thoroughly.
  4. Cook on low heat for at least 45 minutes to meld flavors.
  5. Serve hot topped with sour cream, shredded cheese, cilantro as desired.
