  • 1/3 cup light brown sugar

  • 1/4 cup unsalted butter – melted
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1/2 cup Greek yogurt
  • 1 1/2 cup fresh berries (about 1 cup blueberries and 1/2 cup raspberries)
  • 6 oz. cream cheese – room temperature
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn starch
  • 3/4 cup powdered sugar
  • 1 1/22 1/2 teaspoons milk or cream

Instructions

  1. Preheat the oven to 425°F (220°C). Line a muffin pan with paper liners.
  2. In a medium bowl, prepare the streusel topping by mixing flour, sugar, and salt; add melted butter and whisk until crumbly.
  3. For the cream cheese filling, blend softened cream cheese, sugar, corn starch, and vanilla in another bowl until smooth.
  4. Combine dry ingredients (flour, baking powder, salt) in a large bowl.
  5. In a separate bowl, whisk together egg and granulated sugar; stir in yogurt, oil, and vanilla until pale yellow.
  6. Gently fold wet ingredients into dry ingredients until just combined; then add half of the berries.
  7. In each muffin liner, layer batter with cream cheese filling and top with remaining berries.
  8. Sprinkle streusel over each muffin and bake for 30-35 minutes at 350°F (175°C).
  9. Allow to cool before drizzling with glaze made from powdered sugar mixed with milk.
