  • 1 pound beef stew meat
  • ¾ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 medium yellow onion (chopped)
  • 3 ribs celery (chopped)
  • 3 carrots (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 6 cups low sodium beef broth (or chicken broth)
  • ¾ cup pearl barley (rinsed)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef cubes, season with salt and pepper, and brown on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onion, celery, carrots, and mushrooms for about 5 minutes until softened.
  3. Stir in minced garlic, thyme, and tomato paste; cook for an additional minute.
  4. Return the browned beef to the pot along with any juices. Add broth and bay leaves; stir well.
  5. Bring to a simmer, then cover and cook on low heat for about 45 minutes.
  6. Stir in rinsed barley, cover again, and let simmer for another 45-60 minutes until both barley and beef are tender.
  7. Remove bay leaves before serving; adjust seasoning if needed and garnish with fresh parsley.
