  • 810 lbs beef baby back ribs
  • 2/3 cup brown sugar
  • 2 1/2 tbsp onion powder
  • 2 1/2 tbsp garlic powder
  • 2 tbsp cajun seasoning
  • 4 tsp black pepper
  • 4 tsp smoked paprika
  • 2 tsp kosher salt
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp mustard powder
  • 1/2 tsp cayenne pepper
  • Oil cooking spray
  • BBQ sauce

Instructions

  1. Rinse and pat dry the ribs. Remove the membrane from the bone side.
  2. In a plastic bag, mix all dry rub ingredients until well combined.
  3. Line a baking sheet with non-stick foil and place the ribs on top. Spray with oil and massage the rub onto both sides of the ribs.
  4. Cover tightly with foil and refrigerate for at least 6 hours or overnight.
  5. For grilling, preheat grill and cook ribs over indirect heat for about 3 hours, basting with BBQ sauce during the last few minutes. For baking, preheat oven to 300°F and bake covered for about 2½ hours or until tender.
