  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Clean the mushrooms gently using a damp cloth. Halve larger mushrooms if necessary.
  3. In a mixing bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, pepper, and red pepper flakes.
  4. Toss the cleaned mushrooms in the marinade until well coated. Allow them to sit for about 5 minutes.
  5. Spread the mushrooms in a single layer on the prepared baking sheet.
  6. Roast in the oven for 20–25 minutes, stirring halfway through until they are tender and browned.
  7. Remove from the oven and garnish with fresh parsley before serving.
