  • 1.25 lbs ground turkey sausage
  • 1/2 cup onion (finely diced)
  • 4 cloves garlic (minced)
  • 2 tbsp oregano (dried)
  • 1.25 tsp salt
  • 3/4 tsp black pepper (freshly ground for best flavor)
  • 1 large egg
  • 1 cup bread crumbs (panko recommended for extra crispiness)
  • 1/2 cup olives (pitted and sliced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 cup fresh basil (chopped)
  • 1/4 cup pine nuts
  • 1/3 cup Parmesan cheese (freshly grated)
  • 1/4 tsp red pepper flakes
  • 3 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Slice zucchini in half lengthwise and scoop out the flesh.
  2. In a skillet, heat olive oil over medium heat; sauté onions until translucent, add garlic and cook for an additional minute.
  3. Stir in ground turkey sausage, oregano, salt, black pepper, and red pepper flakes; cook until browned.
  4. Remove from heat; let cool slightly before mixing in egg, bread crumbs, olives, sun-dried tomatoes, basil, pine nuts, and Parmesan cheese.
  5. Generously fill zucchini halves with the mixture. Place in a baking dish, drizzle with olive oil, cover with foil, and bake for 30 minutes.
  6. Uncover and bake an additional 10 minutes until golden brown.
