  • 3 lbs chicken breast, cut into 1/2-inch cubes
  • 1 lb ground beef (80/20)
  • 3 tablespoons vegetable oil
  • 2 large yellow onions, diced
  • 6 cloves garlic, minced
  • 3 tablespoons chili powder
  • 2 cups beef broth
  • 1 can (28 oz) crushed tomatoes
  • Salt and black pepper to taste

Instructions

  1. Pat the cubed chicken dry with paper towels and season with salt and pepper.
  2. In a Dutch oven, heat 2 tablespoons of oil over medium-high heat. Brown the chicken in batches until golden brown; set aside.
  3. In the same pot, add ground beef and cook until browned; transfer to the plate with chicken.
  4. Add remaining oil; sauté onions until softened, then add garlic and cook for an additional minute.
  5. Stir in chili powder and cook for another minute to bloom spices.
  6. Pour in beef broth, scraping up any browned bits. Add crushed tomatoes and all browned meat back to the pot.
  7. Bring to a boil, reduce heat to low, cover, and simmer for 2-2.5 hours until chicken is tender.
  8. Adjust seasoning before serving with your choice of toppings.
