  • 1 cup fresh spinach
  • 1 cup diced sweet potato

Instructions

  1. Boil eggs in hot water for 7 minutes for jammy yolks. Cool in ice water, peel, and halve.
  2. Preheat oven to 400°F (200°C). Toss diced sweet potatoes in olive oil, salt, and pepper, then roast for 20-25 minutes until tender.
