  • 1 medium sweet potato, peeled and cubed
  • 1 tsp olive oil
  • Salt & freshly cracked black pepper, to taste
  • Avocado, sliced

Instructions

  1. Preheat your oven to 200°C (400°F). Toss the cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until golden brown and tender.
  2. Meanwhile, boil water in a pot. Add the eggs gently and cook for 7-9 minutes based on your desired yolk firmness. Cool under cold water before peeling and slicing.
  3. Slice the avocado and season lightly with salt.
  4. Assemble your bowl by arranging roasted sweet potatoes alongside sliced eggs and seasoned avocado. Sprinkle extra black pepper on top before serving.
