  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 dried red chilies (optional, for extra heat)
  • 1.5 lbs (700g) beef chuck or stewing beef, cut into bite-sized pieces
  • 1 large tomato, pureed
  • 1 tablespoon tomato paste
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 cup beef broth or water
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon sugar (optional, balances acidity)
  • 2 tablespoons chopped fresh cilantro (for garnish)

Instructions

  1. Prepare the spice mix by combining ground coriander, cumin, turmeric, paprika, red chili powder, and garam masala in a small bowl; set aside.
  2. Heat oil in a large deep pan over medium heat. Sauté onions until golden brown, then add garlic and ginger; cook until fragrant.
  3. Increase heat to medium-high; add beef and brown on all sides.
  4. Add the spice mix to the pan and toast for about 30 seconds.
  5. Stir in pureed tomato, tomato paste, salt, black pepper, and vinegar; cook for about 5 minutes.
  6. Reduce heat to low and simmer covered for 60-75 minutes until beef is tender.
