  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 8 oz cream cheese (softened)
  • 1 cup unsalted butter (softened)
  • 1 jar apricot preserves

Instructions

  1. In a large mixing bowl, beat together the softened butter and cream cheese until smooth using an electric mixer.
  2. In a separate bowl, sift together the flour and salt, then stir in the lemon zest. Gradually mix the dry ingredients into the butter mixture until combined. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat your oven to 350°F (175°C). On a floured surface, cut chilled dough into three pieces and roll each piece out to about 1/8 to 1/4 inch thick. Cut into 3-inch squares.
  4. Place approximately 1 teaspoon of apricot preserves in the center of each square. Fold corners towards the center and pinch seams closed. Brush tops lightly with egg whites and sprinkle with sugar.
  5. Arrange on an ungreased cookie sheet with space between each cookie and bake for about 25 minutes or until lightly browned. Allow cookies to cool on racks before serving.
