  • 8 oz cream cheese (room temperature)
  • ¼ tsp vanilla extract
  • ⅛ tsp salt
  • 3 cups all-purpose flour
  • ½ cup powdered sugar
  • 12 oz apricot jam (or any jam of your choice)

Instructions

  1. Cream together the butter and cream cheese in a mixing bowl until smooth. Add vanilla extract and salt; mix well. Gradually add flour until a soft dough forms.
  2. Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
  3. Preheat your oven to 350°F (175°C).
  4. Roll out chilled dough on a floured surface to about 1/8 inch thick and cut into squares or circles.
  5. Place half a teaspoon of apricot jam in the center of each piece of dough. Fold over corners toward the center and pinch to seal.
  6. Arrange the filled cookies on lined baking sheets and bake for 15 minutes or until lightly golden. Allow cooling before dusting with powdered sugar.
