  • 4 lamb shanks
  • Salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 6 garlic cloves, smashed
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef stock
  • Fresh thyme and rosemary for garnish

Instructions

  1. Season lamb shanks with salt and pepper.
  2. In a heavy-bottomed pot or Dutch oven, heat olive oil over medium-high heat. Sear lamb on all sides until golden brown (5-7 minutes). Remove shanks.
  3. In the same pot, sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
  4. Stir in tomato paste; cook for 1 minute. Add apple vinegar and beef stock; mix well.
  5. Return lamb shanks to the pot; add thyme and rosemary. Bring to a simmer.
  6. Cover and reduce heat to low; cook for about 2 hours until tender.
  7. Serve hot with your choice of sides.
