  • 1 cup plus 2 tablespoons all-purpose flour

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 3/4 cup light brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C). Line an 8×8 inch baking pan with parchment paper.
  2. Peel, core, and dice the apple into small chunks. Toss with cinnamon and set aside.
  3. In a bowl, whisk together flour, remaining cinnamon, nutmeg, baking powder, and salt.
  4. In a separate bowl, combine melted butter and brown sugar until smooth.
  5. Whisk in the egg and vanilla extract until fully mixed.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Gently fold in the prepared apple chunks.
  8. Pour the batter into the lined pan, smoothing it evenly. Bake for 22-25 minutes or until set.
