Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup cold butter, cut into small cubes
  • 4 cups peeled, chopped fresh apples
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (for apple filling)
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Press the remaining mixture evenly into the prepared pan and bake for about 10–12 minutes until lightly golden.
  4. In another bowl, toss together apples, cornstarch, lemon juice, vanilla extract, cinnamon, and optional nutmeg; let sit for a few minutes.
  5. Spread the apple mixture evenly over the baked crust and sprinkle the reserved crumb mixture on top.
  6. Return to the oven and bake for about 30–35 minutes, or until the topping is golden and the apples are bubbly around the edges.
  7. Allow the bars to cool completely before lifting them out of the pan. Drizzle glaze over cooled bars or enjoy them plain.
