  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup milk
  • 2 medium apples, peeled, cored & diced
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • For the glaze: powdered sugar, milk, vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. In a bowl, mix diced apples with brown sugar and cinnamon; set aside.
  3. Cream together softened butter and granulated sugar in a mixing bowl until fluffy. Beat in eggs one at a time, adding vanilla.
  4. In another bowl, whisk flour and baking powder together. Alternate adding dry ingredients and milk to the butter mixture until just combined.
  5. Pour half of the batter into the pan, layer with half of the apple mixture, repeat with remaining batter and apples. Swirl gently with a knife.
  6. Bake for 50–55 minutes or until a toothpick comes out clean. Cool in the pan for about 10 minutes before transferring to a wire rack.
  7. For the glaze, mix powdered sugar with milk and vanilla; drizzle over cooled bread before serving.
